Apple Maple Cream
Inspired by a old french gramma recipes, the famous sugar cream pie, we found a local farm able to produce a natural fat cream, local sugarsack and apples or pears from our garden and local farms.
Made from organic cane sugar, pure cream from Laiterie Royala in Saint-Joseph de Beauce, apples from ferme Laval Gagnon in Sainte-Famille de l’Île d’Orléans and coffee grounds for a subtle strong flavour.
Blackberry and lemon jelly, acidulous, lemon finish in the mouth. Enjoy with cheese, croissants, ice cream, fresh yogurt, or with a spoon.
Wild blueberries are gathered in fallow or less loved land left fallow. Having become rare, some family farms have managed to coax them out and cultivate them by hand, such as the Ferme Picard in Saint-François on the tip of the island. Otherwise, many small fruit growers grow highbush blueberry, like the Patriote variety. It is harvested between the summer and fall harvests of strawberries and raspberries.
Small strawberries selected the same day and cooked on the Ile d'Orléans with a hint of organic cane sugar and pure lemon juice. Vegetarian. Gluten free.
